Jahrhundert eingef\u00fchrt wurde und aus dessen Milch in den Abteien der Benediktiner vor 800 Jahren der Parmigiano Reggiano entstandt. Die Roten K\u00fchen k\u00f6nnen daher problemlos als \u201eM\u00fctter\u201c des Parmesank\u00e4ses bezeichnet werden. Im letzten Jahrhundert wurde diese weniger produktive, aber robustere und langlebigere Rinderrasse nach und nach durch profitablere Rassen ersetzt. Als die Reggiana-K\u00fche vom Aussterben bedroht waren, hat eine Gruppe von z\u00e4hen und zukunftsweisenden Z\u00fcchtern beschlossen, ein Projekt zu entwickeln, dass eine konstante Zunahme der Tieranzahl gew\u00e4hrleisten k\u00f6nnte. Die Rasse wurde im Jahre 1873 auf der Expo in Wien vorgestellt. Die genealogischen Aufzeichnungen begannen im Jahr 1950 und die Rassenstandards wurden im Jahr 1953 ver\u00f6ffentlicht. Nach den 50\u2019er Jahren begann ein starker Austausch mit kosmopolitischen Rinderrassen wie Bruna Alpina und Frisona, welche die Bev\u00f6lkerung der Roten K\u00fche bis auf 8.000 Tiere in den 70\u2019er Jahren schrumpfen lie\u00df. 1981 wurde ein historisches Minimum von nur 450 K\u00fchen erreicht.<br>Gegen Ende der 80\u2019er Jahre, angespornt durch die Herstellung von Parmigiano Reggiano, nahm die Tieranzahl wieder zu. Heute werden die Reggiana-Rinder haupts\u00e4chlich in Reggio Emilia und Parma gez\u00fcchtet, wo insgesamt circa 3.000 Tiere leben.<\/p>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns margin-top--3xl-from-tablet padding-top--xl-from-tablet is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Beschreibung der Rasse\u2026 und des K\u00e4ses<\/h2>\n\n\n\n<p>Die Rinderrasse Reggiana hat ein charakteristisches rot-goldenes Fell, dass am Unterleib, dem unteren Teil der Beine, um die Augen, die Schnauze sowie am Schwanz heller wird. Die mittlere Milchproduktion in 305 Tagen betr\u00e4gt 5.557kg (3,45% Eiwei\u00df, 3,54% Fett). Die Milch der Reggiana-Kuh ist aufgrund seines hohen Gehalts an Casein und seinen sehr guten Eigenschaften f\u00fcr die K\u00e4seherstellung besonders f\u00fcr die Produktion von Parmigiano Reggiano geeignet. Die besondere Art des Caseins, das in der Milch enthalten ist, eignet sich bestens f\u00fcr eine Reifung von K\u00e4se, wie z.B. von Parmesank\u00e4se mit langanhaltender Reifung. Daher wird der Pamigiano-Reggiano Vacche Rosse erst nach 24 Monaten Reifung mit seinen unz\u00e4hligen Vorz\u00fcgen vertrieben: Es verbessert den Geschmack, das Aroma, die Verdaulichkeit, das Gehalt an Calcium, Phosphor, Eiwei\u00dfen, Aminos\u00e4uren. Die absolute Abwesenheit von Laktose erlaubt Menschen mit dieser Intoleranz den K\u00e4se zu verzehren. Der Parmesank\u00e4se wird von Kinder\u00e4rzten f\u00fcr S\u00e4uglinge und Kinder empfohlen. Sportler k\u00f6nnen sich problemlos gesund und reichhaltig ern\u00e4hren oder sich schwer zu f\u00fchlen. Frauen k\u00f6nnen \u00fcber nat\u00fcrlichem Wege Calcium zu sich nehmen. Ein K\u00e4se f\u00fcr alle, die ein anstrengendes Leben heutzutage haben.<\/p>\n\n\n\n<p>Der Parmigiano Reggiano verf\u00fcgt \u00fcber einen vorz\u00fcglichen Geschmack, einer charakteristischen Farbe sowie einzigartigen Eigenschaften der Erfahrung und Fertigkeit des K\u00e4sermeisters und seiner Handwerkskunst sowie aufgrund reiner Milch und Herstellungsregeln, welche besagen, dass die K\u00fche nur mit gr\u00fcnem Gras gef\u00fcttert werden sollen und keine stimulierenden Futtermittel und nur GVO-freie Getreide verwendet werden sollen.<\/p>\n\n\n\n<p>In der k\u00f6rnigen und duftenden K\u00e4semasse k\u00f6nnen Sie den Geruch und die Nat\u00fcrlichkeit des Grases der Ursprungsregion wiedererkennen. Der Parmigiano Reggiano Vacche Rosse kann mit Senffr\u00fcchten, Honig oder traditionellem Balsamessig aus Modena verkostet werden.
