On le produit aujourd\u2019hui sensiblement comme il y a huit si\u00e8cles : m\u00eames ingr\u00e9dients, m\u00eame technique de production, m\u00eame soin artisanal. Le Parmigiano Reggiano est un fromage enti\u00e8rement naturel, connu dans le monde entier comme le \u00abRoi des fromages\u00bb pour ses caract\u00e9ristiques particuli\u00e8res de production, nutritionnelles et organoleptiques.<\/p>\n\n\n\n<p>Le lait de Vaches Rouges de Race Reggiana poss\u00e8de certaines caract\u00e9ristiques qualitatives qui le diff\u00e9rencient de celui employ\u00e9 pour la fabrication du Parmigiano Reggiano traditionnel. La Rouge produit un tiers de lait en moins que la race Frisonne, mais poss\u00e8de un rendement plus \u00e9lev\u00e9 lors de la fabrication du fromage. En particulier, il y a dans le lait des Vaches Rouges une variante de la cas\u00e9ine \u2013 la prot\u00e9ine essentielle dans le processus de transformation du lait en fromage \u2013 qui garantit une meilleure pr\u00e9paration du fromage \u00e0 une longue maturation, qui a pour cons\u00e9quence une meilleure digestibilit\u00e9. C\u2019est pourquoi la r\u00e9glementation de la production du Parmigiano Reggiano Vaches Rouges exige d\u2019attendre un minimum de 24 mois apr\u00e8s le d\u00e9but de l\u2019affinage pour commercialiser le produit, contre 12 pour le Parmigiano Reggiano traditionnel. Le r\u00e9sultat est un fromage qui, malgr\u00e9 une longue maturation, conserve une saveur douce, d\u00e9licate et persistante. En outre, m\u00eame ses propri\u00e9t\u00e9s organoleptiques sont diff\u00e9rentes. Outre cela, le Parmigiano Reggiano Vaches Rouges fait l\u2019objet d\u2019une r\u00e9glementation suppl\u00e9mentaire de sa production sp\u00e9cifique (appel\u00e9e \u00ab R\u00e9glementation de la Production du Parmigiano Reggiano de Vaches Rouges \u00bb) r\u00e9dig\u00e9e par l\u2019Association Nationale des Bovins de race Reggiana, seul organisme habilit\u00e9 \u00e0 certifier le lien entre la race et le fromage. Un tel cahier des charges ne pr\u00e9voit que de l\u2019herbe, du foin et des aliments certifi\u00e9s sans OGM, une interdiction absolue de toute technique alimentaire qui servirait \u00e0 intensifier la production, une attention maximale port\u00e9e au bien-\u00eatre de l\u2019animal. C\u2019est pourquoi, dans nos \u00e9tables, on trouve encore des animaux qui d\u00e9passent tranquillement la d\u00e9cennie, une chose tr\u00e8s rare dans les autres types d\u2019\u00e9levages. Le pointillage, avec le nom Parmigiano Reggiano, grav\u00e9 \u00e0 froid sur toute la cro\u00fbte du fromage, identifie le nom et la marque d\u2019origine.<\/p>\n\n\n\n<p>Toujours sur chaque meule, de m\u00eame que par l\u2019indication DOP, le mois et l\u2019ann\u00e9e de production, l\u2019harmonieuse disposition des pointill\u00e9s est interrompue par un num\u00e9ro sp\u00e9cifique \u00e0 chaque laiterie. Ainsi, avec un manuel sp\u00e9cial du Consortium de tutelle, on peut remonter jusqu\u2019au producteur-m\u00eame de ce fromage.<\/p>\n\n\n\n<p>Quand le parmesan aura environ un an d\u2019\u00e2ge, il sera expertis\u00e9; celui-ci sera \u00e9valu\u00e9 avec une aiguille et un marteau, meule par meule, par les experts du Consortium du Fromage Parmigiano Reggiano.<\/p>\n\n\n\n<p>Seulement le fromage de qualit\u00e9, c\u2019est \u00e0 dire exempt de d\u00e9fauts graves, ne peut pr\u00e9tendre au sceau ovale marqu\u00e9 au feu portant la mention \u00abParmigiano Reggiano, Consortium de tutelle\u00bb, qui atteste des exigences prescrites par les normes de production.<a href=\"https:\/\/staging.consorziovaccherosse.blacksolutions.net\/wp-content\/uploads\/DSC_0165.jpg\"><\/a><\/p>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns margin-top--3xl-from-tablet padding-top--xl-from-tablet is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h2 class=\"wp-block-heading\" id=\"h-pour-devenir-du-parmigiano-reggiano-vaches-rouges-la-route-est-encore-plus-longue\">Pour devenir du Parmigiano Reggiano Vaches Rouges, la route est encore plus longue<\/h2>\n\n\n\n<p>Dans les entrep\u00f4ts choisis pour l\u2019affinage, le Parmigiano Reggiano de Vaches Rouges reposera et viendra \u00e0 maturit\u00e9 pendant plus de douze mois. Quand les meules auront atteint les deux ans d\u2019\u00e2ge, les experts de l\u2019Association Nationale des \u00c9leveurs de Bovins de Race Reggiana \u00e9valueront la qualit\u00e9 de la meule, y compris \u00e0 l\u2019aide de la technologie la plus moderne. Seules les meules excellentes seront pourront recevoir la pr\u00e9cieuse gravure des Vaches Rouges&nbsp;: une marque au feu unique en son genre appos\u00e9e sur le plateau de la meule. Chaque meule est \u00e9galement sign\u00e9e par un code alphanum\u00e9rique pr\u00e9sent\u00e9 sur une plaque de cas\u00e9ine qui accompagne la meule pour toute la dur\u00e9e de sa vie.
