La production se fait tous les jours de l&rsquo;ann\u00e9e sans interruption. On ne consid\u00e8re en effet ni les dimanche ni les jours f\u00e9ri\u00e9s, il s\u2019agit d&rsquo;un engagement \u00e0 360 degr\u00e9s. Le lait \u00e9tant utilis\u00e9 cru, il est n\u00e9cessaire de le travailler tous les jours afin qu\u2019il ne perde aucune de ses propri\u00e9t\u00e9s, et surtout parce que nous ne pouvons le conserver en aucune fa\u00e7on.<\/p>\n<p style=\"text-align: left;\">Le syndicat a \u00e9t\u00e9 le premier \u00e0 initier la transformation du lait des vaches rouges et actuellement, <strong>l\u2019Exploitation laiti\u00e8re des vaches rouges<\/strong> est la seule au monde o\u00f9 est produit exclusivement le lait de cette race autochtone.
